Congee Recipe

Congee is a type of rice porridge eaten across Asia. It's quick and simple to make, very healthy and nutritious and also really easy to digest if you're not very well.


Serves 4

Ingredients:
1 cup of rice
1 onion
2 carrots
1 potato
1/2 celery
3 chicken legs ( I prefer the leg meat as it's tastier and juicier)
Soya sauce

Instructions:
  1. Wash the rice and place in pan.
  2. Prepare the vegetables: Dice the onion, carrots, potato and celery and place in pan
  3. Prepare the legs by de-jointing the drumstick and thighs and removing the skin and place in pan
  4. Cover the ingredients in the pan with water
  5. Bring the water to the boil, then let it simmer for 20 minutes.
  6. Check the chicken is cooked, the vegetables are soft, add soya sauce to taste and serve
